Aunt Lisa’s Crockpot Pot Roast Recipe
Crockpot time: 4-8hrs | Serves 2 (w/leftovers)
This was the recipe Lisa grew up with, adjusted over time to perfection. Enjoy this timeless classic pot roast recipe, perfect for any winter night with your sweetheart.
Ingredients
- 2 pounds beef chuck roast
- 1 tbsp oil
- 4ish small red potatoes
- 1ish onion
- 4ish carrots
- 1 packet beefy onion soup mix
- 1 cup water
- 1 cup beef broth
- 2 tbsp flour
- splash of wine (optional)
- salt + pepper to taste
Instructions
- 30 minutes before cooking, get your beef out of the fridge, season well with fresh ground pepper and kosher salt, and set aside. After 30 minutes, heat the oil in a heavy skillet over medium-high heat.
- Add the beef and cook until *well browned* on all sides. Place beef in slow cooker. Sprinkle roast with soup mix. Tuck the potatoes in around the roast. Add the carrots and onion. Pour the cup of water into the skillet the beef was browned in, and scrape up any brown bits from the pan. Pour into crockpot. Cover and cook on low for 6-8hrs or high for 4-5hrs.
- Remove the beef and vegetables from the cooker, cover, and keep warm. Set the slow cooker to high and cover with a lid. In the meantime, add flour to a 2+ cup glass measuring cup and slowly add about a cup of beef broth, stirring to mix. Add a splash of wine if desired. Add mixture to slow cooker and which until mixture thickens. Taste and adjust seasoning.
