Nancy's Rum Cake

When rum is added to the cake batter, it not only enhances the flavor but also acts as a tenderizer. The alcohol in the rum helps to break down the gluten in the flour, resulting in a softer, more tender cake.
For best results, Do Not use Electric Mixer - Mix by Hand
Ingredients
Cake
- 1/2 to 1 Cup Chopped Pecans
- 1 Box Golden Duncan mince butter recipe cake mix
- 1 Box vanilla instant pudding (small box)
- 1/2 cup light rum
- 1/3 cup butter (melted)
- 1/2 cup oil
- 4 eggs
Icing
- 1 Cup sugar
- 1 stick of butter
- 1/4 cup rum
- 1/4 cup water
Preparation
Cake
- Grease & flour bundt cake pan
- Sprinkle nuts in bottom of pan
- Mix ingredients, pour into pan (over nuts)
- Bake at 325ºF for 1hr
- Cool cake in pan for 10 minutes
- Pour icing over the cake and let it cool for 2hrs in pan so it does not break when removing.
Icing
- Mix the ingredients in a sauce pan
- Boil for 3min
- Let it sit while cake is baking
