Prep time 10min | Cook time 35min|Total time 45 min | Serves 6
Aunt Lisa made this chili as her submission for a blindfold-tasted chili competition in 2019 and won! It's become the go-to chili recipe for many, enjoy!
Ingredients
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 1 lb 90% lean ground beef
- 2 1/2 tbsp chili powder
- 2 tbsp sugar
- 2 tbsp tomato paste
- 1 tbsp garlic powder
- 1 1/2 t salt
- 1/2 tsp ground black pepper
- 1/4 tsp ground cayenne pepper (or to taste)
- 1 1/2 Cup beef broth
- 1 - 15 oz can petite diced tomatoes w liquid
- 1 - 16 oz can red kidney beans, drained and rinsed
- 1 - 8 oz can tomato sauce
Instructions
- Heat the oil in a large soup pan and add the onion.
- Stir occasionally until the onions are soft, about 5 minutes.
- Add the ground beef, breaking it up with a wooden spoon until brown. Make the beef crumbles as big or as small as you prefer. I like a bigger crumble. :)
- Then, add the remaining ingredients and stir well.
- Bring mixture to a boil, then simmer over med-low heat uncovered for about 25 minutes, stirring occasionally.
- Remove from heat. Enjoy!
Topping suggestions
- Sour cream
- Soda crackers
- Green onion
- Shredded cheese
- Pickled jalapeños
Tips
- I use Frontier brand chili powder. You might notice I don’t put extra cumin in. It’s not a spice I’m particularly fond of so the amount in the chili powder is perfect. I hope you’ll try this ‘less cumin’ version and let me know if it knocks your socks off!
Enjoy ~ Aunt Lisa :)
