Creamy Vegan Cashew Sauce
You'll never guess this creamy sauce is completely vegan, and actually made from pureed cashews. To keep it gluten-free, use tamari.

Ingredients
- ¾ cup raw cashews
- ½ cup water
- ¼ cup packed fresh parsley leaves
- 1 tablespoon lemon juice or cider vinegar
- 1 tablespoon extra-virgin olive oil
- ½ teaspoon reduced-sodium tamari or soy sauce
- ¼ teaspoon salt
Directions
- Combine cashews, water, parsley, lemon juice (or vinegar), oil, tamari (or soy sauce) and salt in a blender.
- Puree, stopping and scraping down the sides as necessary, until smooth.
