Creamy Vegan Cashew Sauce

You'll never guess this creamy sauce is completely vegan, and actually made from pureed cashews. To keep it gluten-free, use tamari.

Ingredients

  • ¾ cup raw cashews
  • ½ cup water
  • ¼ cup packed fresh parsley leaves
  • 1 tablespoon lemon juice or cider vinegar
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon reduced-sodium tamari or soy sauce
  • ¼ teaspoon salt

Directions

  • Combine cashews, water, parsley, lemon juice (or vinegar), oil, tamari (or soy sauce) and salt in a blender. 
  • Puree, stopping and scraping down the sides as necessary, until smooth.
