Aunt Lisa’s Strawberry Delight
Serves:12 | Time: 40 min | Oven 400º
Crust & Topping
- 1/2 cup melted butter
- 1 cup flour
- 1/4 cup brown sugar
- 1/2 cup chopped nuts
- Mix and spread in a 9x13 pan. Bake in a 400º oven, occasionally stirring, for 15 min or until light brown. Press half in the pan and save the rest for the top.
- 1 12oz package of frozen strawberries defrosted
- 2 egg whites
- 1 cup sugar
- 1 tbsp lemon juice
- 1 tsp vanilla
- 1/2 pint whipped cream
Place all but the cream and vanilla into a large mixing bowl and whip on high speed until the mixture is stiff and holds its shape. Fold in whipped cream and vanilla and pile lightly into a cool crust. Sprinkle the remaining crust mixture on top. Freeze overnight. ENJOY!
**For egg-free dessert, substitute 6 tbs of aquafaba & omit lemon juice. Whip for 15-20min
