What exactly is Wassail?

Wassail is more than just a delicious drink - it's a centuries-old tradition that dates back to medieval England. The word "Wassail" actually comes from the Old English phrase "waes hael," which means "be well" or "be in good health." So, when you raise a glass of Wassail, you're not just toasting to good times - you're wishing good health and prosperity to all.

Wassail is perfect for cold nights! And I love that wassail means to 'drink plentiful amounts of alcohol and enjoy oneself with others in a noisy, lively way’. :)

However, it's a delicious, comforting drink with or without the addition of alcohol! 

Serves: 12

Ingredients:

  • 12 cups apple cider (get the good, cloudy kind!)
  • 2 cups orange juice (fresh or not from concentrate for best taste!)
  • 1 cup pineapple juice
  • 1 cup cranberry juice
  • 1/2 cup fresh lemon juice
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 4 cinnamon sticks
  • 1 teaspoon whole cloves
  • 10 allspice berries
  • + optional brandy/cognac/cranberries/orange slices for serving if preferred

 Directions:

In a large pot or slow cooker, combine the apple cider, orange juice, pineapple juice, lemon juice, brown sugar, ground ginger and nutmeg.

Place the cinnamon, cloves, and allspice berries on a piece of cheesecloth and tie together with a string. Place the bundle into the pot with the liquids.

Let everything simmer together over med-low heat for 45 minutes, or if you're using your slow cooker, have the temperature on low for at least 2 hours before serving.

When ready to serve, remove your spice bundle. Garnish with fresh cranberries and sliced oranges if you're feeling fancy!
